How should chocolate be stored?
A1. In a cool (but not refrigerated), dry place, out of direct
sunlight and away from strong odors (smoke, spices, moth balls,
pine-scented cleaners, potpourri, etc.).

Can I freeze my chocolate?

It is not recommended.

Why does my chocolate have a gray or white discoloration?

This is called "fat bloom" caused by the separation of
cocoa butter from the chocolate due to temperatures over 800 F.
It is still perfectly edible, but not as appealing to look at.
