How should chocolate be stored? In a cool (but not refrigerated), dry place, out of direct sunlight and away from strong odors (smoke, spices, moth balls, pine-scented cleaners, potpourri, etc.). Can I freeze my chocolate? It is not recommended. Why does my chocolate have a gray or white discoloration? This is called “fat bloom” caused by the separation of cocoa butter from the chocolate due to temperatures over 80° F. It is still perfectly edible, but not as appealing to look at.
